Unlike other Ethiopian coffees, which are produced by smallholders or cooperatives, this coffee is produced on private farms (estates).
The AnaSora estate is located in the Guji region of southern Ethiopia, at an altitude of 1,900 to 2,350 meters. In addition to cultivating coffee trees, the estate also operates its own washing and processing station. Special peach enzymes are added to the green beans during processing, and anaerobic fermentation is performed in sealed containers with the addition of carbon dioxide. This allows the aroma and flavor of peach to be perfectly infused into the coffee beans.
